ABOUT
The Setting
After a short ferry from the mainland of Belize, you will arrive at Ambergris Caye, an idyllic island sanctuary facing the baby blue Caribbean and the world’s second-largest barrier reef. Along the 25-mile stretch of powdery shoreline is a village of 32 vibrantly colorful casitas with thatched roofs known at Matachica Resort. The resort was recently resdesinged with purpose and sustainability in mind, these efforts landing it in the top ten resorts of Central America in Travel + Leisure’s “World’s Best.”
Despite its tropical seclusion, this is no Robinson Crusoe situation, however. There is an exciting restaurant helmed by a French Laundry alum, jungle activities and water-bound excursions to keep your dance card full, a lounge-worthy pool scene, and you’re just a golf cart ride from the buzzing town of San Pedro.
Sleep and Sanctuary
Design with purpose was the core philosophy behind Matachica’s recent redesign. Thirty-two vibrantly colored beach casitas and villas, with sea and partial sea views seamlessly blend into Ambergris Caye’s inherent beauty. Each is topped with an authentic thatched roof and adorned with a personal patio and hammock. Kick-off vacay in tropical luxury by entering your villa threshold into reimagined interiors with fully-renovated en-suite bathrooms and upgraded fixtures, and eco-friendly amenities.
The bedroom walls are adorned with tropical custom murals by famed Montreal-based illustrator Cécile Gariépy for a pop of color and whimsy. The super comfy beds draped in soft, beachy linens help you sleep off a day of rustic island adventures on eco-friendly mattresses. Recent studies have determined the casitas and villas are also best enjoyed barefoot, lounging in your terrace hammock, with a good book or a good cocktail.
Eat. Pray. Eat.
The open-air Mambo Restaurant redefines typical vacation resort fare spearheaded by former Head Chef de Partie at the French Laundry, chef Léon Cerredo from Paris, France, and Culinary Institute of America graduate and pastry Chef Stephen Lighter. This dynamic duo reimagined two dining spaces and refined menus of each, seamlessly blending global techniques with local flavors and practices. To complement the restaurant, Mambo Bistro is a casual beachfront eatery with a light menu of local organic produce and fresh sea fare for breakfast, lunch and dinner.
